The kids are really into building their own dinners lately.
I like it because it fills in the muffin tins quickly!

Muffin Tin Monday is back!
Yesterday's was the coolest ever...
Build-your-own-burrito!

The kids had a blast putting it all together themselves and were somehow not satisfied that I was only going to take a picture of the muffin tin! So here are the big kiddos:

They ate pretty good and enjoyed having the option of putting their food in their tortillas or eatting it straight out of the tin. What are your best muffin tin monday recipes?

Muffin Tin Monday

Has it really been so long? I download the pics from the camera and find two Muffin Tin Mondays? Thankfully I am aware that my food is Not So Gourmet and will only post tonight's dinner.

Have I mentioned that my kids help make dinner every night? When it is their turn to cook, they also get to "pick" what we eat (from two of my choices) and they say the prayer when it's time to eat.

Well, tonight was One's turn to choose and cook what we had for dinner. His choices were chicken and stuffing or tortellini. Why, oh why did he pick chicken and stuffing? He never likes it. He loves tortellini. But chicken and stuffing it was.

Things we had to endure before he finally got to open his pudding:

I'm allergic to stuffing.
My throat won't let me eat it.

Poor guy. Maybe next time he'll remember to pick the tortellini!

Muffin Tin Frogs?

One had this week's Muffin Tin Monday. He picked ravioli.

I ♥ Post Options!

Yes, I heart post options because I can write today's post tomorrow and still make it look like today. Totally confused? That's because I'm cheating. I'm really writing this on Tuesday and just making it look like it's still Monday. See why I heart post options? :o)

Anyway, "today" (see? now you're in on it too!) I'm having a nightmare of a time making this:

I've borrowed double-pointed needles but since Two apparently has a humongous head, I needed 320 stitches to stay on them and it wasn't working! After a trip to joann's to buy more of the same size needles to put the stitches on (yes, just for two rows, I know) it's looking pretty good and I'm several rows into it.

Muffin Tin Monday is something we have just really run with. The kids absolutely love it! They take turns helping me cook every night but it is especially fantastic to get to help on muffin tin monday. Who knew? And we have to get creative to fill all the tins. That means throwing in chunks of cheese or opening a can of olives.... but tonight One had his own plan for filling up the tins....salad! I have never made such a miniature salad but it was great. And there is just something about an iceburg lettuce salad that screams crunched up saltines on top! Maybe it's my southern beginnings, but oh my! Not many things could taste better!

Muffin Tin Monday

Another week, another Muffin Tin Monday! The kids love it and argue about who will be my Kid Chef that night. Will they still be fighting for dinner-cooking rights when they're teenagers? We have to get creative to fill up all those muffin tin holes....like deconstructing spaghetti into noodles, sauce, and meatballs. There's three tins filled just like that! Who knew it was so fun to actually dip your noodles into the sauce? Or that carrots apparently also taste good dipped in spaghetti sauce? As long as they make it into little tummies, who cares?! Here's One with tonight's dinner: peas, carrots, garlic bread, meatballs, spaghetti sauce, and curly-Q noodles. YUM!

On to my Baby Jesus adventure story: I found Two wandering through the house with a cup of water. I wasn't sure what was going on, but like any good mother, I told her to take the cup back to the kitchen without asking her what she was doing. Oh, those wonderful parenting moments. Later, I'm in the living room and I see Baby Jesus in front of the fireplace with some strange looking white stuff, which I soon discover to be wet toilet paper!

Me: "Two? We're you giving Baby Jesus a bath?"
Two: "Uh huh"
Me: "With toilet paper?"
Two: "Yes."

Fortunately for Two, I thought that was one of the sweetest things I had ever seen and it very much reminded me of the woman who washed Jesus' feet. What an amazing thing to be reminded of, especially through the innocence of my sweet three year old.
